Born in Belgium, Marc De Canck was introduced to flour, cream, spices and chocolate at a very young age thanks to his father being a pastry maker, and eventually followed in his footsteps. He worked in restaurants first as an apprentice, then as a baker. Given his curious nature and love of food, he would taste sauces, touch meats and breathe in the smell of fresh fish, and gradually went on to become a cook. A passionate young man at the time, De Canck quickly climbed the rungs of the restaurant industry, but was stifled by the countless controls imposed by the European system. He wanted to travel the world, and ended up looking for more freedom in Quebec. His talent was recognized from the outset and the restaurants he worked at quickly came to be among the best. In 1995, he opened his own restaurant in a small space on Laurier Avenue; in less than a year, la chronique became a “must” for food lovers…

A few blocks away, a young boy discovered a love of cooking and spent long nights perfecting his chocolate molten cake… As a young child, Olivier De Montigny used to accompany his mother to the restaurant where she worked. Thanks to the time he spent in the kitchen there, he quickly learned to recognize quality and good taste. The new restaurant on Laurier Avenue unavoidably drew him; he salivated merely at reading the menu and treated himself to a meal as soon as he could afford it. Olivier took pleasure in smelling, tasting and analyzing De Canck’s dishes. His curiosity drew the attention of De Canck and the two united their passion for food, with the young De Montigny working under the benevolent, generous wing of Chef De Canck. Olivier was obviously talented and generated new stars for la chronique. Five years later, De Canck partnered with Olivier, and the two chef-owners, whether working alone or together, create the aroma of happiness in the kitchen, because at la chronique, “happiness is in the plate”.
